
Senior Care Cumming GA – Great Summer Time Crab Cakes!
Looking for a light and fun recipe for your senior this weekend? Try these wonderful crab cakes! They have been a family favorite of ours for many years.
The Secret to great crab cakes is buying very fresh lumps of crabmeat and not over stirring the crab mixture before shaping it.
¼ cup minced onion
1 tablespoon lemon juice
1-pound fresh lump dry crab meat, drained
1 tablespoon Old Bay seasoning
¼ cup melted butter or margarine
1 teaspoon dry mustard
1 ¼ cups soft bread crumbs
1 teaspoon Worcestershire sauce
1 tablespoon mayonnaise
Dash of ground red pepper
1 large egg lightly beaten
Cook onion in butter in a large skillet over medium-high heat, stirring constantly until tender. Remove from heat; stir in crabmeat, ¾ cup breadcrumbs, and remaining ingredients. Shape mixture into 8 patties, dredge patties in remaining bread crumbs.
Pour oil to depth of ¼ inch into a large heavy skillet. Fry patties in hot oil over medium-high heat 3 minutes on each side or until golden. Drain on paper towels and garnish with lemon and fresh parsley. Serve hot with cocktail or remoulade sauce. Yields 4 servings.
